Welcome to second post in this feature! I was planning on doing this more regularly, but life has definitely been getting in the way. And.. since I’m probably quite absent right now – yay, scheduled posts! – I figured.. I’d give you guys some comfort food! And, admit it, what better comfort food than easy-to-make cake?
I remember craving cake after reading The Art of Baking Blind [Check out my review here!], but found myself stuck.. When you live with your boyfriend, you don’t really eat a whole cake by yourself. Not to mention I shouldn’t even be eating cake since my gastric bypass three years ago. So.. I went on the hunt for some kind of solution and boy, did I find it! It’s ridiculously easy to make – and fast at that!
For 1 portion / mug of cake
~ 40 gr. dark chocolate
~ 2,5 tbs butter
~ 2 tbs granulated sugar
~ 2 tbs self-raising flower
~ 1 egg
~ Break the chocolate in small pieces and put them in a big mug.
~ Add the butter and melt in the microwave for 30 seconds on 750W.
If you can’t adjust the power of your microwave, this site might be helpful!
~ Stir with a fork until all bits and pieces have dissolved into a smooth mixture.
~ Add the sugar and stir again, using a fork!
~ Add the flower and stir some more, once again using a fork!
~ Add the egg and stir until you get a smooth mixture. This can take a while, so just keep stirring!
~ Put your mug in the microwave for 1 minute on 750W, then check whether it’s cooked through.
Now you have a choice to make! You can serve the cake like this, which means it should be like a moelleux in the middle. If you want a firm cake, simply put it in the microwave for another 30 seconds on 750W.
~ My recipe said to let the cake rest for two minutes before eating but.. honestly? I never had much patience.
I’d definitely try this! Especially during those busy days when you need a sweet pick me up but you don’t have the time to go to the store or make something that takes too long

Exactly! That and I hate how baked goods at the store are always so huge. Like. My BF isn’t a sweet tooth so I can’t justify buying an entire cake for just myself. [Okay, I could.. But I’d probably end up having to throw half of it out or something..]

Ermygerd drool!!! I have to take out the chocolate unfortunately (best part I know!) but wow that looks doable and so good!!

Right? Ooh, do let me know how it works out without the chocolate! That would make it a .. bit more healthy, I guess? On the other hand.. I don’t know if I could do it without chocolate, haha.

Ooh another one to try. I use a recipe from Pioneer Woman on the Food Network site. This one looks good too. Sometimes you just want a quick cake and still get the home cooked feel!

Mug cakes are a great solution! Portion controlled, there’s a ton of variety, and CAKE! Hope all of you are doing well!
